Living: Turkey Arugula Sandwich with a Fried Egg.

So I rarely share recipes with people since I’m one of those kitchen chefs that have it “floating” in my grey matter.  I think I’m sharing since it was healthy and it tasted great.

A very simple sandwich that satisfied.

Ingredients:

1 egg

2 slices of oven roasted turkey

2 slices of Ezekiel bread

Handful of Arugula

Coconut Oil

S&P to taste

Combining as I did it:

Using about a finger dab of coconut oil in a pan, fry the egg.  Add S&P to taste and cook to your preference.  I did it over-easy.  Set aside.  Clean out the pan, then butter one side of each Ezekiel slice of bread with coconut oil.  Toast in that same pan on Medium. 

On the most toasted side of one slice, add Arugula, then slices of turkey, place the egg on top, and top with final toasted slice. 

I enjoyed it so much, I thought I’d share it with everyone here.  A simple and healthy lunch for me.  I think there is something about how the flavour of the arugula and coconut oil mixed that made this stand out.  Let me know what you think!

I often walk down Draper St in Toronto on my way to my studio and the homes there have so much early Toronto history. This particular house that I passed is the birth home of Lincoln Alexander, the first black member of parliament. I had the honour of reenacting one of his speeches for Black History Month in high school, and met him last winter. I hope one day to shoot his portrait, his contributions to Canadian history is appreciated and I thank him.
